I've always loved to cook, and being in my mom's kitchen cooking with her brings all sorts of warm fuzzies. My mom gave me a lot of independence in the kitchen at a young age. At 14, when all my friends could get their first summer jobs and I was still too young, she gave me the job of menu planning and cooking all the meals for the weeknights. I wrote the menu plan and grocery list, she took me shopping, and I did all the cooking every night. It was my first solo act, and it gave me great confidence.
Since the theme of Yummy Mummy Week is celebrating Mothers, this is one of my mom's favorite dessert recipes, which I just recently rediscovered. Now I see why she made them so much when I was growing up: They are easy, look fantastic, and are delightful to eat!
Mini Cheesecakes
2 - 8 ounce packages cream cheese, softened
1/2 cup sugar
1/2 teaspoon vanilla extract
2 eggs
12 vanilla wafers
Cherry pie filling
Mix cream cheese, sugar and vanilla. Add eggs. Place a vanilla wafer on bottom of 12 foil lined muffin cups.
Pour cream cheese mixture into muffin cups. Bake at 350ยบ for 20 minutes or until centers are almost set. Cool.
Refrigerate 2 hours or overnight. Top with canned cherry or any other kind of pie filling before serving. Makes 12 cheesecakes.
My son helps me make this yummy treats, and of course, he is the prize taste tester. To get him involved, I had him help put the foil muffin liners in the cups, add the vanilla wafers, and help run the mixer.
You can use any kind of pie filling or chocolate syrup to jazz these babies up. I love the original cherry, my husband loves them plain, and my son just begs for them in any form!
