Berry & Ricotta Muffins

I love muffins & I tend to make A LOT of muffins whenever it isn't too hot here in Australia to use the oven. I've been looking for some good toddler friendly muffin recipes that have little sugar but still taste delicious. I've also been looking for recipes with hidden vegetables & ricotta cheese because some days its hard to get my little guy to eat his veggies or drink his milk. Unable to find the perfect muffin I have been trying my hand at making up my own:

Berry & Ricotta Muffins

Ingredients:
-2 eggs
-2/3 cup sugar
-1/2 cup milk
-1/4 ricotta cheese 
(can substitute with plain yoghurt)
-1 teaspoon of vanilla
-1/2 cup butter, melted & cooled
-2 cups of flour
-1 Tbsp baking powder
-1/4 Tsp salt
-1/4 Tsp cinnamon
-1 cup of strawberries, cut into chunks
-1 cup of blueberries

Directions:
-Preheat oven to 375 degrees F
-Grease muffin tins.
-In a large bowl whisk together the eggs & sugar until light.
-Add milk, ricotta, vanilla & melted butter.
-In another large bowl combine flour, baking powder, salt & cinnamon.
-Add the dry ingredients to the wet ingredients & stir until the flour disappears.
-Gently stir in the berries.
-Spoon batter into the muffin tin so they are 3/4 full.
-Bake for 20-25 minutes until a tester comes out clean.
-Invert & cool on rack

Makes 12 muffins.
