In an attempt to save money and eat healthy food S & I are eating vegetarian for dinner twice a week. I made this Vegetarian quiche last week and it was a huge hit. It was also super easy & quick to make so we will be eating a lot of it for the rest of the summer.

-1 sheet frozen reduced-fat puff pastry, thawed
-1 cup NESTLÉ CARNATION Light & Creamy Evaporated Milk
-Salt and freshly ground black pepper
-1/2 cup broccoli florets
-1/2 cup red capsicum (pepper), deseeded & diced
-1 tomato, diced
-1 onion, diced
-4 button mushrooms, sliced
-1/4 cup low fat cheese, grated
Optional: Add 2-3 vegetarian sausages
Serve with: Tossed salad & fresh buns or bread
-Preheat oven to 180°C (350°F).
-Lightly spray a 20cm pie dish with oil & line with pastry (stretch pastry up edge of dish).
-Mix eggs, milk, salt and pepper in a bowl, then add broccoli, capsicum, tomato and onion.
-Pour mixture into pie dish & arrange mushrooms
-Sprinkle with cheese & bake for 30 minutes or until egg mixture has set.
-Serve with bread rolls & a tossed salad.
