Slowcooker Indian Vegetable Curry

I recently came across this recipe from a friend & am so excited about it. I'm just starting to cook vegetarian food in an effort to be eat better & save money. I was a bit worried because I've never attempted to make Indian food before but it was a huge hit in my family. I almost always forgo the leftovers and make S or K eat them because I cannot eat something 2 days in a row. I ate this for dinner, lunch and dinner again. WOAH!!!! Must be good, eh? 

Slow-Cooker Indian Vegetable Curry

-2 Tbsp olive oil
-1 yellow onion, chopped
-5 carrots, peeled and chopped
-2 Tbsp curry powder
-2 Tbsp brown sugar
-1 inch piece of ginger, peeled and grated
-4 cloves garlic, minced
-1 jalapeno, chopped (if you don't like it spicy remove the seeds)
-3 cups cooked chickpeas
-2 large potatoes, peeled and cubed
-1 green pepper, chopped
-1 bag frozen green beans, thawed
-2 tsp salt
-fresh ground black pepper
-1/8 tsp cayenne
-1 can (15 oz) diced tomatoes
-1 cup vegetable broth
-1 can (15 oz) coconut milk
-1 bag of baby spinach

-Heat oil in large skillet over medium heat.  
-Add onion and carrot; cook until tender, about 5 minutes.  
-Add curry powder, sugar, ginger, garlic, and jalapeno; 
cook 1 minute, stirring constantly.  
-Place onion mixture in 5 quart slow cooker.  
-Stir in chickpeas, potato, bell pepper, green beans, salt, 
black pepper, cayenne, tomatoes and broth.  
-Cook on high until vegetables are tender, about 6 hours.  
-Stir in spinach and coconut milk.  Cook until spinach wilts, about 5 minutes.
-Serve over basmatti rice
